Easy "Pasta Salad" Recipe

INGREDIENTS :
For the dressing:
• 120ml olive oil
• 60ml of red wine vinegar
• 2 teaspoons dried Italian seasoning
• 1/2 teaspoon granulated sugar
• 1 clove garlic, minced
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
For the pasta salad:
• 1/2 medium red onion, finely chopped
• 225 g of short dry pasta, such as rotini
• 225g cherry tomatoes, halved or quartered
• 1 small cucumber, quartered lengthwise, then thinly sliced widthwise
• 115g mini mozzarella balls, drained and cut in half
• 115g salami slices, cut into 1.5cm wide strips
• 1/2 cup pitted kalamata olives, halved
• 1/4 cup coarsely chopped fresh parsley leaves
INSTRUCTIONS :
1. Make the dressing : In a small bowl, combine the olive oil, red wine vinegar, dried Italian seasoning, sugar, minced garlic, salt and black pepper.
2. Add Onion : Stir in finely chopped red onion and let sit to soften while you prepare the rest of the salad.
3. Cook the pasta : Bring 2 quarts of salted water to a boil in a large saucepan. Add 225g of pasta and cook until al dente, about 8 minutes. Meanwhile, prepare an ice bath in a large bowl.
4. Chill the pasta : Drain the pasta, rinse under cold water, then immerse the colander in the ice bath and let cool for 5 minutes.
5. Mix ingredients : Drain pasta well and transfer to a large bowl. Add tomatoes, thinly sliced cucumber, mini mozzarella balls, salami sliced into strips, pitted and halved kalamata olives, and chopped fresh parsley. Stir dressing and onions into pasta and toss well.
6. Refrigerate : Place the pasta salad in the refrigerator for at least 30 minutes before serving to allow the flavors to blend.
This pasta salad keeps well in an airtight container in the refrigerator for up to 3 days. Before serving, be sure to taste and season again if necessary to enhance the flavors. It's a convenient option for quick meals, perfect for weeknight lunches or dinners.
